​We are absolutely thrilled to unveil the latest addition to our menu, a dish that truly embodies the vibrant and comforting flavours of the season. Forget everything you thought you knew about plant-based cuisine; this is a showstopper.

​The Star: Crown Prince Squash from Godney Aquaponics

​We are absolutely committed to sourcing the very best ingredients, and we are thrilled to feature the exquisite Crown Prince Squash—grown locally in Godney by the brilliant Melv and Sally at Godney Aquaponics.

​This particular variety is famed for its dense, deep-orange flesh and its wonderfully sweet, almost nutty flavour, making it perfect for absorbing the aromatic spices we use.

​The squash is lovingly prepared: first rubbed with a smoky, aromatic Harissa spice blend that brings a gentle warmth and North African flair. We then chargrill it until it’s beautifully caramelised on the outside and fork-tender within. The harissa and the charring create a magnificent balance of heat, smoke, and natural sweetness, showcasing the quality of the produce from our local growers.

 

​A Bed of Comfort

​Resting beneath the squash is a generous portion of fluffy buckwheat groats. This ancient seed provides a naturally gluten-free base with a satisfying, earthy texture that is a perfect counterpoint to the soft squash. This is tossed with fresh, seasonal greens that have been lightly sautéed in garlic and herbs, adding a necessary touch of depth and comfort.

 

​A Symphony of Sauces

​What truly elevates this dish is the vibrant trio of accompaniments:

 

    • Red Pepper Purée: A smooth, sweet, and smoky base that provides a luscious foundation for the dish.
    • Chimichurri: Our zesty, herbaceous Argentine sauce, packed with fresh parsley, oregano, and a hint of chilli, cuts through the richness and adds a brilliant, fresh brightness.

 

​The Grand Finale: Dukka

​The whole ensemble is finished with our unique pomegranate and hazelnut dukka. This Egyptian-inspired seasoning blend offers a glorious crunch and a final flourish of flavour—the sharp tang of the pomegranate seeds, the toastiness of the hazelnuts, and the earthy spices bring the entire plate to life.
